Memorial Day Grilling Tips from Chicago’s Culinary Kitchen in Palatine

Kristina and Greg Gaardbo from Chicago’s Culinary Kitchen in Palatine joined the CBS 2 morning show to offer tips to help cooks become masters of the grill.

For some Memorial Day is considered the kickoff of the summer barbecue season.

Greg Gaardbo says overcooking is a problem with steak while Kristina Gaardbo says that starting out with a good product is also important. Getting certified Angus beef is important.

Greg explains that barbecue chefs should be aware of having an indirect zone and a safe zone on a grill so you can move a steak to a safe spot if its getting too hot.

Reverse searing is recommended for thick steaks … that’s when you smoke the meat first at about 111°F, and then finish by chargrilling extremely hot for about 60 seconds on each side.
